At only 23 years old, he won the title of best Italian sommelier and began a professional career that saw him collaborate with the greatest of Italian cuisine. But wine for Federico Graziani is more than just a harmonious pairing, it is a deep love, a search for the essence. The meeting with Salvo Foti, a volcanic Sicilian oenologist, changed Fede’s life and the encounter with Etna determined his path. In 2006 he bought a 100-year-old vineyard in Passopisciaro and gave birth to one of the area’s most representative wines: Profumo di Vulcano. Subsequently, the production was enriched with a cuvée of white grapes unusual for Etna: Mareneve. A small ecosystem between 600 and 1200 metres above sea level in which Fede succeeds in producing a wine that, as he says: “Doesn’t have to be perfect, it has to be true”.
